Triple Chocolate Protein Cupcakes | Recipe

Are you looking for a chocolatey snack which has a kick of protein? You have to try these!

This have to be my best baked creation yet when it comes to using protein powder. They are so moreish and you wouldn’t guess they have whey protein in. These are also butter and sugar free.

Ingredients:

  • 6 scoops chocolate whey protein
  • 65g sweetener
  • 30g coconut flour
  • 30g cacao powder
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 pint almond milk
  • 4 egg whites
  • 4 teaspoons vanilla extract
  • dark chocolate chips
  • white chocolate chips

 

Method:

Preheat the oven to 180c

Grease a muffin tin using coconut oil, olive oil or Fry Light – whichever you prefer. I used Fry Light.

Combine whey protein, sweetener, coconut flour, cacoa powder, baking powder and salt to create a dry mix.

Add the almond milk and chocolate chips and stir to create an even batter.

Scoop the batter into the muffin tins filling them 3/4 full.

Bake for 20 minutes in the centre of the oven.

Once cooked remove to cool on a wire rack.
